BREAKFAST TACOS

INGREDIENTS:

  • 2-4 EA BACON; CHOPPED
  • 2 EA BELL PEPPER; SLICED
  • 1/2 EA ONION; SLICED
  • 3 EA EGGS; WHOLE
  • TT SALT – HIMALAYAN SALT; BLACK PEPPER
  • 1/2 EA AVOCADO
  • 1/2 CUP OF CILANTRO; PULLED
  • 6-8 EA TORTILLAS; “STREET TACO”
  • GARNISH WITH TORTILLA CHIPS; CRUSHED


PROCEDURE:

  1. RENDER BACON IN SAUTE PAN
  2. REMOVE BACON
  3. SAUTE BELL PEPPER AND ONION IN BACON FAT
  4. ONCE SOFT, RETURN BACON AND SCRAMBLED EGGS INTO MIX
  5. WHEN EGGS SOLIDIFY, SEASON TO TASTE
  6. HEAT TORTILLAS ON GRIDDLE OR BURNER
  7. TOP TORTILLAS WITH MIXTURE
  8. FINISH WITH AVOCADO SLICES AND FRESH CILANTRO
  9. GARNISH WITH CRUSHED TORTILLA CHIPS
