  • 1 lb of Redfish Filets
  • 1 Tbsp Olive Oil
  • 1 Thinly Sliced Red & Yellow Bell Pepper
  • 1 Thinly Sliced Serano Pepper (Seeded)
  • 3 Cloves of Garlic (Chopped)
  • 1/4 Cup of Curry Paste
  • 1 Sweet Potato (Cubed and Par Boiled)
  • 1 Thinly Sliced Zucchini
  • Salt & Pepper to Taste
  • Additional Curry Powder to Taste
  • 400 ml can of Lite Coconut Milk
  • Rice or Naan for Serving
