The Drunken Oyster: Mardi Gras Gumbo Dip

Ingredients:

  • 1/4 cup butter
  • 1/2 onion chopped
  • 2 celery ribs, sliced
  • 1 cup chopped assorted bell peppers
  • 1 1/2 pounds peeled, large raw shrimp,
  • 1 pound chopped andouille sausage
  • 1 garlic clove, chopped
  • 1 (8-oz.) package cream cheese
  • 3/4 cup sliced pickled okra
  • 1/2 cup heavy cream
  • 2 Tbsp. grated Parmesan cheese
  • Creole seasoning to taste
  • 2 tablespoons chopped fresh flat-leaf parsley optional
  • Toasted French bread baguette slices

Procedure:

1. Melt butter in thick pot;

2. add onion, peppers and celery sauté until translucent

3. Stir in shrimp andouille sausage and garlic stirring occasionally,

4. Reduce heat, add cream cheese, stirring until cheese is melted.

5. Add heavy cream to thin out

6. Stir in okra and 1/2 cup Parmesan cheese. gently mix

7. Season Wit Cajun seasoning

8 Served with toasted french bread
