Adrian Manriquez is a junior at Caprock High School.  He’s the winner of the HEAT (Hospitality Educators Association of Texas) Cupcake Battle. He won first place and best cake at regionals. He will compete in Porter  April 13th and 14th for the state contest. 
 

Coconut Lime Cupcakes

Baking Temperature: 350

Baking Time: 15-18 minutes

Yield: 12 standard cupcakes

Ingredients: Cupcakes
4 Tablespoon lime juice 
¾ cup coconut milk from a can
2 large eggs
1 lime slice
1 teaspoon baking powder
½ teaspoon baking soda
1 ¼ cups flour
¾ cup sugar
½ teaspoon salt
1 ½ cups powdered sugar
¼ cup vegetable oil
2 tablespoons shredded coconut
2 ½ teaspoons coconut extract
½ cup unsalted butter (softened)
8oz cream cheese
12  standard cupcake liners

Ingredients: Lime Zest Frosting
½ cup butter (softened)
1 ½ teaspoon key lime zest
1 teaspoon vanilla extract
3 cups powdered sugar (add if needed)
3 Tablespoons key lime juice
2 Tablespoons milk
Key lime zest

Directions: Cupcakes
Preheat the oven to 350 degrees, soften butter and cream cheese, then add the cream cheese, butter, sugar, eggs (one at a time), lime juice, coconut milk, oil, coconut extract, and the shredded coconut to the mixer bowl, mix at a medium speed till smooth. Sift your flour, salt, baking powder, and baking soda, and then slowly add to the mixing bowl at low speed. Next add the powdered sugar to the mixing bowl at low speed until blended.

Put 16 cupcake liners on a liner pan and carefully fill ¾ to the top. Bake in preheated oven for 15-18 minutes, use a toothpick to check if done. Remove and cool completely before frosting.

Frosting Directions:
Beat softened butter, vanilla extract, and salt at medium speed until creamy. Gradually add powdered sugar alternately with 1 Tlbs. of key lime juice, and 2 Tbls. of milk at a time. Beat at low speed until blended well and smooth after each addition. Add additional milk or powdered sugar if needed to make a thick frosting for piping. Using a large star tip and piping bag pipe frosting onto each cupcake and garnish with lime zest.
