Rory’s Cinnamon Apple Pork Chops

News

Ingredients:
2 apples pealed and cored
1 teaspoon garlic
1/2 cup brown sugar
1 cup chicken broth
1/2 stick butter
1 teaspoon cinnamon
1 dash nutmeg
6 pork chops
1 tablespoon olive oil
1/2 cup apple cider
1/4 cup soy sauce
Salt and pepper

Directions:
1.    Place pork chops in baggie; add apple cider and soy sauce. Let marinade at least 1 hour– overnight is great
2.    In a large sauté pan, add half the butter and olive oil. Heat to medium heat, add pork chops to pan
3.    Slice apples about into 1/2 inch thick wedges
4.    Cook pork on each side– about 3 minutes
5.    Once pork is cooked, remove and set aside
6.    Using same pan, add remain butter and half of chicken broth to deglaze pan. Reduce broth by half
7.    Add apples, brown sugar, cinnamon , nutmeg and garlic.  Sauté until apples are soft; add more broth if pan starts to dry out.  Sauce should be thick
8.    Once apples are soft, place pork chops back in pan to heat up for 2 minutes.  Place 3 pork chops on a plate and top with apples
9.    Serve with sweet potato pancakes and a great riesling.
