Ora King Salmon Tartare Sphere
with Roasted Lemon Emulsion, Brussel Sprout Leaves, Sesame French Green Beans, Seaweed Salad, Capellini Crisp, Crystal Lettuce, Pea shoots
– Ora King Salmon 4oz (Skinned and deboned then diced small)
– 2oz Brussel Sprout Leafs (Blanch for 1 minute then iced in water bath)
– 1.5 Oz French Green Beans (Blanch for 1 minute then iced in water bath)
– 2oz Roasted Lemon Emulsions (Cut in half, Sear or Grill face down until deep caramel color)
– 2oz seaweed salad (Can find at local Asian Markets)
– 1oz Capellini Crisp (Par cooked then deep fried golden brown)
– 2oz Roasted Lemon Emulsion
– .5oz Black & White Sesame Seeds
Roasted Lemon Emulsion
– 2 juiced Fire Roasted lemons (Roasted on a grill or flat top)
– 1 tsp sesame oil
– 1 tsp olive oil
– .5 tsp minced shallots
– 1 tsp sliced chives
– 1 tsp Soy sauce
Mix all ingredients in a bowl then fold lightly with Diced Salmon 
Keep refrigerated till time to serve
Serve in a chilled glass or bowl with Wonton Crisps
