Cooking with Rocky: Egg Drop Soup


  • 1 quart Chicken Stock
  • ½ tsp Fresh Ginger; grated
  • 1 tbsp Soy Sauce
  • 1 tbsp Cornstarch
  • 2 Eggs; lightly beaten
  • 2 Scallion (or Green Onion); chopped
  • TT Kosher Salt
  • TT Black Pepper

Optional: Shredded Chicken, Tofu, Mushrooms, etc.


1. Bring stock, ginger and soy sauce to boil over medium heat.

2. In mixing bowl make slurry (cornstarch and stock).

3. Slowly pour slurry into soup while stirring.

4. Reduce heat to low simmer.

5. Pour in the eggs slowly while stirring soup in one direction.

6. Turn off heat.

7. Add green onions.

8. Season to taste.

9. Add any additional options you desire!

10. Serve.
