Chef Rocky’s Sweet Chili Shrimp

Chef Rocky’s Sweet Chili Shrimp
– 1 lb Shrimp; P/D (tail-on)
– ¼ cup Sweet Chili Sauce
– ¼ cup Honey
– ¼ cup Lime Juice
– 2 tbsp Sesame Oil
– 2 ea Garlic Clove; minced
– 1 tbsp Soy Sauce
– 2 ea Spring Onion; chopped
– TT Crushed Red Pepper
– Optional: Steamed Rice; 3 cups
1. Whisk together chili sauce, honey, and lime juice. 
2. Marinade shrimp for at least 1 hour (or up to 24 hours).
1. In hot saute pan, add sesame oil and saute shrimp. (reserve marinade)
2. When shrimp turns pink, add garlic and continue to saute. 
3. Deglaze with soy sauce. 
4. When nearly dry, toss in marinade. Continue to cook until sauce is reduced by ½ . 
5. Toss in spring onion and crushed red pepper. 
To Plate: 
1. Plate rice (or noodle) in center of plate. 
2. Top with shrimp. 
3. Drizzle with sauce. 
4. Garnish with spring onion curls.
