Irish Dragon Chayote Mojito

Ingredients:
– 3 cups cold water
– 1 cup coarsely chopped peeled Chayote
– .75 oz fresh lime juice – zest Lime and set aside
– 5 mint leaves
– 1.75 oz White Irish Rum
– .5 oz kettle One Vodka
– 2oz chilled Club Soda
– 1 cup Ice Cube
– 1 Peeled Chopped Rough Chayote
– 1 oz Mint Cloud
– 2oz Simple Syrup
 
Preparation:
1. Place 3 cups water and chopped Chayote in a blender; process until smooth. Strain mixture through a sieve into a medium bowl; discard solids.
2. Place 1oz Simple Syrup, .75 Tablespoon lime juice, and 4 mint leaves in a 2-cup glass measure; crush with a wooden spoon. Add 1.75oz White rum .5oz Kettle one and 2oz Chayote mixture; Stir 2oz Club Soda. Place 1/4 cup ice in a 12-ounce glass; pour over ice. Garnish with 1 Lime and mint Garnish, 1 Chayote slice, Finish with a spoon of Mint Froth Repeat procedure with remaining ingredients. 
 
Mint Cloud
2 Egg whites whipped to stiff peak lightly fold 1 Tbsp. honey, 3 Tsp Sugar, .5 oz lime Zest and .5 oz Fresh Minced Mint
– Simple Syrup
– ½ cup water
– ½ cup Sugar 
Place in sauce pot let reduce by half on low heat: Cool then add to your cocktail
 
The Duke
 
Ingredients:
– Jalapeno
– .75oz lemon juice
– .75oz honey
– 1.75oz of your favorite whiskey (Irish for St Patrick’s Day)
 
Procedure:
1) Muddle jalapeno in a shaker and add all ingredients with ice.
2) Shake well and pour over ice
3) Garnish with jalapeno slice for optional extra heat and lemon twist
