Chef Guzman’s Maple Glazed Salmon


Chef Guzman’s dish includes: Maple Glazed Salmon, Pommes Puree, Baby Carrots, Grape Tomatoes, French Green Beans, Maple Glaze, Green Onions.

Dish Ingredients:

  • 1 -6 oz King Salmon
  • 2oz Baby Carrots
  • 2oz Grape Tomatoes
  • 2oz French Green Bean
  • 3oz Maple Glaze
  • 4oz Pommes Puree
  • 1oz Green Onion

Maple Soy Glaze Ingredients:

  • 1-cup maple syrup
  • 1/4 Cup Brandy
  • 1/2 cup sodium soy sauce
  • 1 tsp minced garlic
  • 1/2 cup rough chopped peeled fresh ginger
  • 1 tsp crushed red pepper
  • ½ cup Green onions
  • 2 cups Brown Sugar
  • 1 half fresh Squeezed lemon


1. Combine all ingredients and reduce by half

Pommes Puree Ingredients: 

  • 3 pounds Yukon Gold potatoes
  • Kosher salt
  • 3 Thyme sprigs
  • 3 Garlic cloves crushed
  • 3 sticks unsalted butter, cut into tablespoons
  • 1 cup Heavy cream warmed


Step 1

In a saucepan, cover the potatoes with cold water and season generously with salt. Add the thyme and garlic, bring to a simmer and cook until tender, about 40 minutes. Drain well. Let the potatoes cool, then slip off and discard the skins.

Step 2

Using a ricer and working over a large bowl, rice the potatoes with half of the butter. Strain through a fine sieve into a large saucepan, pushing them through with a sturdy rubber spatula. Mix in the remaining butter and the heavy cream. Season with salt
