6 cups cubed (3/4-inch) Good bread baguette style(about 1/2 pound)
2 large Heirloom Tomatoes seeded and cubed
1/2 seedless cucumber
1/2 orange or Yellow bell pepper small diced
1 celery rib, thinly sliced (1 cup)
3/4 cup packed basil leaves, torn
1/3 cup fine-quality extra-virgin olive oil
1/4 cup Balsamic vinegar
Sea salt and fresh cracked pepper to taste
1. Preheat oven to 300°F with rack in middle.
2. Spread out bread on cookie tray and toast in oven, stirring occasionally, until golden, 20 to 25 minutes. Cool completely.
3. Dice tomato, cucumber, and pepper. Thinly slice celery and clean and tear basil.
4.Toss together bread, and remaining ingredients,Season with salt, pepper, oil and vinegar and let stand at least 20 minutes before serving.
