Rory's Pumpkin Cheesecake Mousse

Pumpkin Cheesecake Ingredients:
1 can pumpkin pie filling
2 8 oz  packages of cream cheese
1/4 cup powdered sugar
1 cup heavy cream

Directions:
1.Place all ingredients into a cold bowl and using electric mixer, mix until stiff peaks form
2.Divide into 4 glasses layered with streusel and vanilla bean cream
3.Place in refrigerator


Vanilla Bean Cream Ingredients:
1 cup heavy cream
1/4 cup powdered sugar
1 Madagascar vanilla bean scraped or 1 teaspoon real vanilla bean

Directions:
1.Place all ingredients in bowl and whip until stiff peaks form
2.Divide into 4 glasses layered between pumpkin mousse and streusel
3.Place in refrigerator


Ginger Streusel Ingredients:
1 cup flour
1 stick butter
1 tablespoon ginger
1 tablespoon cinnamon
1/2 cup sugar

Directions: 
1.Melt butter and mix all ingredients together till crumbles form (think crumb cake style)
2.Pre heat oven to 350 
3.Spread and bake for about 25 minutes or until golden brown
4.Use to garnish mousse
