10 Driscoll strawberries, sliced
2 cups jicama, thinly sliced
1/2 yellow bell pepper, thinly sliced
1/2 green bell pepper, thinly sliced
1/2 small red onion
1 cup shredded cabbage
1/2 cup red cabbage
1 lemon, juice and zest
1/4 cup extra virgin olive oil
2 tablespoons honey
Sriracha to taste
Mint for garnish
1. In a large bowl mix together jicama, bell pepper, red onion, both cabbages and lemon zest.
2. In a small bowl mix together lemon juice, honey and sriracha and season with sea salt to taste.
3. Add strawberries to slaw mix and gently toss in dressing.
4. Garnish with mint and more zest.
