Michelle's Zucchini Parmagian

2 large zucchinis 
1 1/2 cup marinara/tomato sauce
2 cups vegatable oil
2 cups flour
3 eggs
1/4 cup milk
1/2 cup grated Parmigian cheese
11/2 shredded mozzarella
Cajun seasoning
Chopped parsley for garnish

1. Slice zucchini very thin
2. Heat oil to 325 degrees 
3. Beat eggs and milk together
4. Place sliced zucchini into egg wash, coat well then place in flour and coat well
5. Once coated place in oil slice by slice
6. Fry until golden brown and place on paper towel to drain oil
7. While still hot coat slices with Parmigian cheese and season with Cajun seasoning.
8. Place fried coated slices in baking dish, top with marina then mozzarella cheese and bake in a pre-heated oven set at 375 degrees until golden brown
9. Garnish with parsley. Serve hot
