Brian's Scallops with Avocado Mousse

Pan Seared Scallops with Avocado Mousse
Ingredients:
2-4 egg whites
3 T agave nectar
2-4 avocados
Sea Scallops
1 part quinoa
1 Squash
1 heavy cream

Directions:
Whip egg whites with agave nectar and slowly mix in avocados. Sear scallops in pan 3-4 minutes each side. Serve with creamed squash quinoa.
