Brian's Pork Lettuce Wraps

Pork Lettuce Wraps
1 ground pork loin
1 fresh ginger
1 cup ponzu
1 diced carrot
1 diced scallion

Brown pork with carrot.
Add scallion, ginger and ponzu.
Let simmer 10-20 minutes.
Serve with lettuce cups and fresh veggies.
