Ashley's Cinco de Mayo Shrimptini & Margaritas



Half a pound of shrimp, peeled and de-veined
Two avocados, diced
2 oz tomato, diced
2 oz purple onion, diced
1 oz lemon juice
Finish with a pinch of kosher salt

Make sure shrimp is de-veined and peeled; boil shrimp just enough for the shrimp to turn pink. Then, dice all of the ingredients and mix together gently so that the diced avocado do not break up. Finish with the squeeze of lemon juice and kosher salt.  Serve in a martini glass with herb flour tortilla chips or any chip of your choice.  This is great as an appetizer or a topping for tacos.
