2 cups heavy cream
1/2 cup grated Parmesan cheese
1/2 cup Pepper Jack Cheese
1 onion, Juillened
1 red bell pepper (thin Sliced)
1 green bell pepper (Thin sliced)
1/4 cup
1 cup roasted Corn
1/2 cup Black Beans
Tabasco to taste
Worcestershire sauce to taste
6 Shrimp blackened
1 catfish filet
Cajun seasoning
Tortillas strips fried
Olive oil
1 pound penne pasta cooked off
1.     In a large saut pan add oil, onions, peppers, jalapenos and saut until onions and peppers are soft
2.    Add Heavy cream and bring to slow simmer
3.    Add Cheese and stir until melted. add Beans and corn Tabasco and Worcestershire
4.    Using a cast iron skillet or pan heat to high temp
5.    Season shrimp and catfish with Cajun seasoning and blacken on hot pan for about 2 minutes each side
6.    Add pasta to cream sauce
7.    Top pasta with blackened shrimp and catfish then top fish with fried tortillas
