2 Baked Potatoes
1/2 stick tablespoon butter
1/8 cup olive oil
1/3 cup shredded smoked gouda
1/3 diced sauteed onions
1 teaspoon sauteed garlic
1 tablespoon parsley, chopped
Salt and pepper, to taste


1.  Shred potatoes into bowl; add smoked gouda; season with salt and pepper
2.  In a medium pan, add 1/2 butter, oil and sauteed onions and garlic. Once soft, add parsley; saute for a minute and add to potato mixture.  Reserve pan for later
3.  Mix potato mixture together well and form into pancake or square shape; flour both sides
4.  Using same pan as you used to saute onions and garlic, heat remainder of oil and butter.  Add cakes and let cook until golden brown on each side.
