Begin by blanching the peaches. Fill a large stock pan with water and put the peaches in the water and bring to a boil. You will know when the peaches are ready by testing to see if the skin pulls away easy from the peach. After blanching, peel all the peaches and cut them into bite size chunks and put them in a large bowl. (This is all personal preference if you want bigger or smaller pieces. It's supposed to be rustic, so no two pieces have to be the same size.)
Add the cinnamon, nutmeg, vanilla, sugar and flour to the peaches and mix well. Then taste- if you feel it needs more spices and want to add more nutmeg or cinnamon feel free! After, pour into a pie dish or cake dish.
For the Crust:
Mix flour, sugar, baking powder and salt. Then add in the cold cubes of butter and mix together until you have fine pea like crumbles. Then beat your egg and heavy cream in a small bowl and then add it to your flour & butter mixture. It will turn into nice moist, sticky dough. After take a portion of the dough and press it out with your hands, not to thin, and place it around the pie. It will be like putting puzzle pieces together. Please remember, it's suppose to be rustic so don't worry if it's not perfect. They will all run together in the oven for a delicious crust anyway.
Bake at 350 degress for one hour.
