Crust Ingredients:

1 stick butter, room temp

1/2 cup flour

1 tablespoon cinnamon

1/4 cup brown sugar

1/4 cup white sugar

 

Directions:

1.    Pre-heat oven to 350 degrees.

2.    Mix all ingredients together with clean hands-- kneading butter in with fingers to create lumps.

3.    Place on cookie sheet and let cook until golden brown, approximately 15 minutes.

 

Cider Reduction Ingredients:

1 cup sugar

1 cup apple cider, reduced to 1/4 a cup

1/2 stick of butter, cubed

1/2 cup heavy cinnamon cream

1/2 teaspoon cinnamon

pinch of clove

pinch of Nutmeg

1 vanilla bean, scraped

1/2 teaspoon sea salt

 

Directions:

1.    In a thick bottom pot at medium heat, reduce apple cider to 1/4 a cup, set aside and let cool.

2.    Add sugar to pot and continue stirring until sugar starts to melt. Add water a little at a time if you fear you’re going to burn the sugar.

3.    Mix the cider, vanilla and spices together.

4.    Once all sugar is melted and is a golden amber color, slowly add cream mixture and butter.

5.    It should be carmel consistency, but loose enough to drizzle

 

Filling Ingredients:

3 Mutsu apples or honey crisp apples, peeled and sliced evenly

1 tablespoon butter

2 tablespoons sugar

1 oz spiced rum

1/2 teaspoon cinnamon

 

Directions:

1.    In a large sauté pan melt butter and then add apple slices to sauté for a few minutes.

2.    Add sugar, rum and cinnamon and sauté until all alcohol is burned off.

3.    Using a round cookie cutter, place on a cool plate arrange apples inside ring to form a circle on plate.

4.    Drizzle with cider reduction along length of plate.

5.    Top drizzle with crust and add a scoop of vanilla bean ice cream.
