Rory's Spiced Rum Marinated Pork Chops

Spiced Rum Marinated Pork Chops with a Trio of Peach Chutney

Topped with a Sriracha and Bacon Streusel

4 pork chops

1 cup spiced rum

1/2 red onion julienned

1/2 white onion julienne

1 teaspoon garlic chopped

3 slices of raw bacon chopped

1 cup chicken broth

3 different types of peaches if available sliced medium thin

Sea salt and pepper

 

 

1)  In a large skillet or sauté pan, heat to medium.  Add bacon and cook until partially done.

2)  Season pork chops and marinate in spiced rum

3)  Pour out fat into separate bowl for later

4)  Add onions and a little of spiced rum sauté until translucent

5)  Add garlic and chicken broth

6)  Let slow simmer until semi-thick

7)  Place pork chops on grill and cook on each side for about 4 minutes or until done

8)  Do Not over cook or pork will be dry

9) Slice pork chop on bias and top with peach chutney and streusel. Serve over mashed taters


Sriracha Streusel

1 cup of flour

1/2 stick melted butter

1/3 cup sugar

Bacon fat

1 teaspoon cinnamon

2 teaspoon Sriracha

salt and pepper

 

1. Preheat oven to 350

2. Mix together all ingredients and bake until golden brown
