Rory's Omi's German Pancakes with Nutty Amaretto Filling

Pancake Ingredients: 
6 Eggs
2 cups all purpose flour
2 cup milk
1/8 cup sugar
2 teaspoons vanilla or 1/2 bean scraped
Non-Stick spray or butter
2 Nonstick pans 
Fillers can be anything from syrup, honey, brown sugar, powdered sugar, Nutella, chocolate, to scrambled eggs and any other omelet filling, make it your own

Chef's tip: using a blender is the easiest quickest way to make this batter

1.Mix Together flour and sugar
2.With a whisk or electric hand whisk add milk to sugar and flour until you have a very thin batter that just coats the back of a spoon
3.Add Vanilla and mix in well
4. Heat pans to medium high and spray or butter pan
5.Using a ladle pour a thin layer of batter on pan and move pan around in circular motion to coat entire base of pan. Let cook for 1 minute and carefully flip 
6.Stack until all batter is used up

Chef's tip: Always make a practice pancake to test heat of pan and personal ability

Filling Ingredients: 
4 German pancakes
1/4 stick butter
1 cup Disaronna Ameretto Liquor
1/8 cup sugar
2 scoops vanilla Ice cream
1/2 cup candied pecans (Recipe at

1.In a large skillet melt butter to medium heat
2.Add Ameretto liquor and sugar bring to slow simmer 
3.Fold German pancakes into 4th's creating a triangle shape.
4.Place pancakes in Pan and coat in ameretto sauce
5.Once hot place 2 folded pancakes on nice plate and top with a scoop of vanilla ice cream, pour remainder of sauce over both plates and top with candied pecans
