Foil Baked Salmon

INGREDIENTS:
 
2 ea Salmon Filet; skin-off
 
2 tsp Olive Oil
 
1 ea Tomato; diced
 
2 ea Shallot; chopped
 
1 ea Lemon
 
1 tsp Dried Oregano
 
8 sprigs Fresh Thyme
 
TT Kosher Salt/Black Pepper
 
PROCEDURE:
 
1. Preheat oven to 400F.
 
2. Place salmon filet diagonally on a square sheet of aluminum foil.
 
3. Drizzle with olive oil. Season with S/P.
 
4. In mixing bowl, mix tomato, shallot, lemon juice, oregano, and thyme.
 
5. Spoon mixture over salmon.
 
6. Wrap foil up and around to create a "salmon package".
 
7. Place "salmon packages" on baking sheet and bake for approx. 20 min.
 
8. Move "salmon packages" to plate and serve.
